Hi, I prepared plant extracts in MeOH /water (80/20) and evaporated both solvents. However, my extracts are not completely soluble either in water or in methanol, Could you please tell me why and give me a suitable way to dissolve them in water and in MeOH?

I think the present of phytosteroids in this crude extract so defatting is neeeded
The extract is soluble in the large volume used to extract the sample, but the crude extract concentration is too high for the sample you wish to use. The extract probably has a mixture of non polar compounds (and mentioned above) and water soluble compounds as well.
For running on a silica column, I dissolve the sample in whatever allows it to dissolve (often a mixture of water/methanol/dichloromethane, add the silica, and evaporate the solvent.
One can also mix wash the crude extract with hexanes, followed by ethyl acetate, followed by methanol, and finally water and get the sample into solvents of differing polarity.
Agree with jack silver its now kind of supersaturated solution that is not going to b dissolved that easily in small amount of solvent.....
I have faced the same problem. This is due to very high concentration of analytes and you must have used hot methanol during extraction and cold one while dissolving. The best way to dissolve is using an ultrasonic bath.
