I am working in a system that cuts the probe when it detects the objective compound, but I do not know which UV wavelenght to use. It is a cualitative method, so only observing the fluorescence of FAM would be enough, of course, using a camera to watch the results.

FAM is normally detected in visible wavelengths, with excitation at about 485 nm and emission at about 535 nm.
Be aware that photobleaching of FAM is quite severe. There are other fluorophores with similar Ex/Em wavelengths that are more resistant to photobleaching.

Be careful about the pH of your solution, has to be slightly basic, say 7.4 or higher for Fam.
