I will like to know in your experience for applications as yours (DAQ and optimization in a machining process), you would suggest a desktop or laptop? Windows, IoS-Mac, or Linux?. Anything else you should advise?
Which programs do you use? Matlab? Labview? Anything else?

desktop or laptop provide specific advantage. Desktop provides much stable working unit which you can add capacity such as extra RAM, storage or GPU if required in the future. You have to buy the laptop with a specific capacity at the beginning. Adding capacity is not feasible. RAM/disk might be swapped for bigger size, if supported by motherboard, but will be expensive.
high capacity laptop will be very expensive, same spec desktop will be relatively cheaper with options to add on.
Matlab and Labview are used for different use cases. Mostly people use labview for data acquisition and save the data. Once data is available, matlab is used for processing further.

Data acquisition is a real time process. Ideally you need a real time operating system (Linux may come close with a suitably patched kernel, as machining I would assume only needs maybe millisecond time resolution or maybe even less). I would suggest a desktop, that way you can add specific acquisition cards with RT (real-time) capabilities. Or you can buy an industrial PC (a chassis with extension capabilities, like the ones offered by National Instruments for example, to which you add specialized modules). Any way youdice it, it will become expensive real fast, and you will probably be locked in to th evendor you choose. You might though end up better off than buying a CAD/CAM package product.
