I think many real-world applications are in the HCI field, especially with the rise of the Virtual Reality, voice agents and gesture and action recognation,..... there is a much more needed for the HCI at the moment. However, it mostly depends on you to choose one one them which is of your interest. If you are not sure about this three choice, and you so so, I am strongly suggesting you go for HCI because numerous real-world issues apply to the HCI field! And the job market also has a higher position for admission in higher academic levels, plus it's more attractive and fun!

A lot of topics in engineering you can carry out your M. Sc. Thesis but according to your interest, the network security is a topic very old and killed on the research. The HCI is a hot topic and you should open your eyes on the other hot topics such as the 5th generation of mobile networks,the DSP of medical images, the cloud computing, and the Internet of things.

I am not from any field of Engineering but I feel Human - Computer Interaction is the current and upcoming field and can be taken up for research. There can me may aspects of this field - you can take the Economic, Social, Administrative and other such aspects to make research valuable for the society/today's world.
