Pectin substances found in fruits and pectic acid in peels. A fibre fraction (FF) can be obtained from the residue that remain after pectin extraction of orange peels by nitric acid.Orange and lemon peels are also used for obtaining pectic polysaccharides. Citrus peels are treated with 96% ethanol, and the obtain alcoholinsolublesolids (AIS) are subjected to a sequential extraction with hot distilled water and hot 0.5% HCl. Water- and acid-extracted orange (WEOP and AEOP) and lemon (WELP and AELP) pectins are obtained. Acid extraction give higher yields of pectin than water extraction and lemon peels are richer in pectin.
