Quantification of antioxidants involves the estimation of Flavonoids ,Alkaloids ,all phenolics etc .you can try the simple spectrophotometric methods like Follin-cio-caletu for total phenolics ,besides you can go for the HPTLC for exact quantification of the antioxidants using the standards as reference.

Given the complexity of the oxidation processes and the diverse nature of antioxidants, with both hydrophilic and hydrophobic components, there is not a universal method by which antioxidant activity can be quantitatively measured accurately. Most often, the responses of different and complementary tests must be combined to give an indication of the antioxidant capacity of the test sample.
