I'm working with maximum daily rainfall data and I already found for soil and agriculture variables, but i need some classification of Variation's Coefficient (CV %) more focused on hydrologycal variables.

I have understand that you want to study the variability of rainfall data but the question is whether you are interested in measuring variability on a daily, weekly, monthly, seasonal or annual basis.
Usually, analyse:
- long-time series of annual rainfall can help to understand and identify severity, intensity and frequency of extreme rainfall events (e.g. https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6014055/)
- annual precipitation will help in the evaluation of the total water budget of the water resources of an area
- monthly rainfall variations can be a possible way to express seasonality or to determinate crop water requirements
