the most important and less read text in information theory is the seminal paper from Claude Shannon of 1948. If students read it, the most is done. It is also self-explanatory.

I don't know the literature but I would think the "by example" one would be good. I happen to learn best by example. I also remember there were a number of "programmed" courses - I learned about LaPlace transforms from a programmed course. They lead you from simpler to harder and review you along the way. Moore method or discovery method worked well for abstract algebra. But here we're thinking about the 70's. Some of those methods don't happen to work well for some students, you may have to give extra office hours.
