I find this book to be very useful:

Byrne, Barbara M. (2010). Structural Equation Modeling with AMOS: Basic Concepts, Applications, and Programming. (2nd Ed.) New York, NY: Routledge Academic.

However, there are also lots of good online resources you can use. I would particularly recommend the Statwiki site run by Prof. James E. Gaskin, which provides some plain language instruction with explanatory videos and some downloadable tools.

The Byrne (2010) is one of the best books on AMOS SEM.  If you want you can also watch some youtubes in the following link on how to use the AMOS.  I find reading the Byrne's (2010) book, watching the youtube and actually practicing with the AMOS software is one of best & fastest ways to learn AMOS SEM.

Note: Byrne' (2010) book is based on AMOS v17, but in the market today you can find newer versions like AMOS v22
