A more basic and concise source would be Chapter 12 of John Robyt's book Essentials of Carbohydrate Chemistry, 1998, Springer-Verlag, New York. ISBN 0-387-94951-8.
Another excellent book for saccharide characterization is Carbohydrate Analysis by Modern Chromatography and Electrophoresis, El Rassi, Z. (Ed.), Journal of Chromatography Library, Volume 66, Elsevier, New York, 2002. ISBN 0-444-50061-8. This book contains a good initial chapter on preparation of carbohydrates from different sources by Andrew Mort and Margaret Pierce as well as a wealth of information on subsequent analytical methods.
