In preparation for a research project that will look into typical job patterns of a sustainable career path, I am currently looking for international data-bases that collect and offer job announcements in the green / sustainable sector. I am pretty aware of what is going on in the German-speaking countries but would be glad if anybody could point me towards similar offers in the UK, US and Australia.

I wonder if you could infer something from the past about what could happen in a pathbreaking future.It is like trying to infer something about the future in 1800 just before the steam revolution and/or in 1900 just before the personal car revolution.
At some very abstract level and/or aggregate level surely something can be inferred.But the true day-to-day content of the life is rather loose.
A lot of studies by economic historians although not all very well versed in quantitative analysis.
Good luck,but my feeling is that the subject of your tentative work should be more finely defined.

You have used an interesting choice of words above - sustainable career path, which I would place as different from a sustainability career path. All functions that we now engage in society will need to adapt to climate change, changing business and social paradigms, decreasing raw resources, and increasing populations. Those behavioral and operational adaptations are the functions of a sustainable career path. However executives and employees that are focused on the basic functions of sustainability - integrating them into the current environment (for instance sustainable procurement i.e. procurement that observes and ensures that it is conducted with an eye toward reducing waste, reducing egregious use of hydrocarbons and other non-renewables, developing more efficient processes, and generally being observant and compliant with the fundamental rules of sustainability) are engaged in sustainability careers. Creating and sustaining new areas of activity or new business entirely focused on sustainability (for instance developing a remote sensing business that provides raw or interpreted data from various remote sensing platforms allowing any number of enterprises to manage their activities with much more environmentally friendly and ecologically sensitive awareness; further refining the process of cellulosic ethanol as a renewable energy source; etc.) are also some of the many sustainability jobs. Obviously there is much more than one of these spaces can functionally support regarding the clear and significant differences between either of those job scenarios and the current job environment.
