As I understood you would like to know the mineral assemblage when the protolith is sedimentary either carbonate-greywacke

Granulite facies metamorphism occurs at temperatures of approximately 500 to 700 degrees celsius and pressures of 8-70 kbar.

In case of pelites the mineral assemblage is - microcline +/- plagioclase +/- scapolite +/- garnet +/- cordierite (low-P) +/- andalusite (low-P) +/- kyanite (high-P) +/- sillimanite (moderate, low-P, high-T) +/- graphite +/- rutile +/- ilmenite +/- olivine +/- corundum +/- spinel +/- sapphirine (high T).

In case of quartz-feldspathic rocks the mineral assemblage is - microcline + plagioclase + garnet +/- pyroxene +/- hornblende.

whereas in case of calc-silicate rocks the mineral assemblage is- calcite, dolomite, quartz, diopside, scapolite, forsterite, wollastonite, graphite.

Small amounts of hornblende are often present, which is likely due to the water pressure being lower than lithostatic pressure during most granulite facies metamorphism.

Evidence for relatively low water pressures comes from fluid inclusion data indicating carbon dioxide-rich fluid compositions and from preservation of some bulk compositions that should have undergone nearly total melting at granulite temperatures if water pressure had been equal to lithostatic pressure.

Thus the presence of hornblende need not always indicate retrograde metamorphism, you observe it's textural association with pyroxene to ascertain the retrograde metamorphism.

The details given by Asoori are appreciable. According to my knowledge, however, granulite facies metamorphism takes place above 700  degree C. Pressure is variable from high to low facies series. In most cases, granulite facies assemblages would be free (or contain very small amounts) of hydrous minerals.

I do not wish to go into the details of your question because they are confusing. But turning to the actual question, as you know metamorphic mineral assemblages are controlled by the composition of the protolith, as detailed by Asoori, and conditions of metamorphism, mainly pressure and temperature. In your case, it is not clear whether your carbonate is calcite, dolomite or something else, neither the relative proportions of the carbonate and greywacke-additional factors. Once you have some knowledge of these issues, you can plot your data on an ACF diagram of the granulites facies and figure out the possible mineral assemblages. In a mixture of greywacke and dolomite, containing excess Si, orthopyroxene is typical of granulites facies and in pelitic assemblages sillimanite.  

I should have mentioned that orthopyroxene is also diagnostic of the granulite facies in mafic to intermediate rocks and charnockites. In mafic compositions, it is often accompanied by clinopyroxene, and these rocks have been called two-pyroxene granulites by some. The formation of garnet is controlled by pressure and chemical composition of the protolith.

Despite of the misunderstood, Dr. Qasin Jan got my point. First, the enstatite is clearly not stable with horblende, that is a mineral poikiloblastic with a late crystalization considering the rock's fabric.

By the mineral assemblage, I'm supposing the protolith nature, but at this case I don't have any free carbonate in the section, 'cause of this I was talking about "quartz saturated"; but the field association and some minerals give me the sugestion of the kind of protolith.

As far I know,  fluid/water deficient granulites are the residual dry rocks which are produced after the removal of significant amount of melt. The partial melting reactions are mainly muscovite (around 650 to 700C), biotite (>800C) or hornblende (900C?) dehydration reactions in peraluminous protoliths that is  metapelitic sources. So, granulite residual rocks will be very deficient in these minerals. These reactant minerals, during melting reaction produce peritectic minerals, for example in case of biotite dehydration reaction, garnet and Kspar would be  reaction products, while plagioclase will be consumed with biotite in the reaction. but these peritectic minerals might leave behind in the residual rocks where melt was initially generated or they can be found in the migmatite leucosomes, neosome etc, migmatite can be a met segregation, melt extraction, melt transfer or melt accumulation zone. Similarly, hornbelende dehydration reaction produce plagioclase as a peritectic mineral? Micro structures can  also tell important information for the likely reactions. To trace back the  protolith, one should take in account that what has melted? and has been extracted and this must be balanced with the residual rocks as granulite.  Calcsilicate rocks are less fertile to generate melt as compared to metapelites.   Vein-like granulites facies assemblages superimposed over amphibolite facies rocks are reported from many different metamorphic terrane including Sri Lanka and south India. May be, pressure-temperature conditions are not the only player to result this. Dear Guilherme: really your question is confusing, are you talking about an association of carbonate and graywacke metamorphosed to granulite facies, or a carbonate-bearing graywacke in this facies? I have studied, as usual in the Coastal Cordillera of Venezuela, a real complex melánge of terranes of all kinds and ages imaginable, some Grenvillian (Neoproterozoic) calc-silicate rocks associated with possible quartz-wackes and metapelites. The calc-silicate rocks range from "dolomitic marbles" to metaevaporites, the first have diopside, forsterite (usually totally serpentinised), and phlogopite (somewhat chloritised), and rarely, spinel. The metaevaporites have chondrodite, diopside, phlogopite, alkali feldspar, carbonate, and Ca-scapolite, with some tremolite. The quartz-wackes instead have clinopyroxene, alkali feldspar, andesine plagioclase, titanite and zircon. The metapelites are quite variable in mineralogy, even in the same thin section variations are noticeable at centimeter scale; they can contain garnet, hypersthene, cordierite-sillimanite, hornblende, andesine plagioclase, quartz and Ti-biotite, in different proportions. I assume that you're working in rocks from the Sunsas Orogen, in SW Brazil, which relate to the Grenville Orogeny, but Brazil is such a big country, that other granulite-facies belts can be present in other places for sure. don't let yourself impressed by the colleagues calling your question confusing; it is, but after all "granulitic facies" is even more confusing. Etimologically, it would mean fine-grained rock. And yes, as pointed out above, two pyroxenes are diagnostic for HT-conditions, while forsterite and grossular are not. It would be more useful to list the mineral assemblage besides the general classification as calc-silicate rock. Augite rather than diopside would be in equilibrium with orthopyroxene - do you know the composition of clinopyroxene?
