Adsorption-related thermodynamic parameters and structures have been well studied. However, I'm not sure if there is a correlation between kinetic energy components like flow rate, incident flow angle vs the analyzed surface and the adsorption. For example, in terms of a solid/surfactant interface, will the amount of adsorbed molecules/surface excess be different if the flow changes from perpendicular to parallel to the surface axis?
It depends in what regime you are working. If you are working in a pressure regime with a long mean free path, the orientation of your flux will become more and more important: if the mean free path is very short, collisions will make the incident objects randomly oriented upon impact. For long mean free paths, the relationship between surface orientation and incidence angle becomes important. This is used in the method "Grazing-incidence deposition"; check out literature on that subject, if you are interested.
I agree with Jürgen Weippert And I am adding to being sure. It is depends on speed vector of individual particle and not on macroscopic flow (for fluid mode - the mean free path is very short). Based on thermodynamics adsorption depends on temperature. If you look at it at microscopic level there are particles with own dispersion of kinetic energy (speed) described by statistic macroscopic approach as temperature. Based on Equipartition theorem average energy of each particle is 1/2*k_b*T for each degree of freedom. So for example for Ar is E=1/2*m*^2=3/2*k_b*T. Excluding both extremes of speed/temperature where quantum physic and STR play role. Thus, adsorption (in the meaning how much gas is adsorbed) depends on system (fluid-substrate) temperature. Temperature of gas is also described by pressure. That is why, we also speak about saturated pressure Ps. If the partial pressure of gas is lower than Ps gas is going to evaporated from surface and if the pressure is higher than Ps, gas is going to be adsorbed. In particle mode/approach where particles are even ionized there can be much more effects … like ISS or Rutherford backscattering spectrometry but this is another story and it for all semester lecture.

Up till date, I have not come accross any direct mathematical equation relating adsorption and kinetic energy of adsorbate and adsorbent except when kinetics of adsorption is been determined. It is to be noted that kinetic energy is not measured by kinetics of adsorption!
We may assume that particles of the adsorbate and adsorbent in a solution would possess kinetic energy when agitated as the adsorption progresses. We may assumed that an adsorbed specie would possess zero kinetic energy but the kinetic energy possessed by the adsorbate and adsorbent would be proportional to the entropy of the system.

The adsorption energy is a thermo dynamical property and is globally used to determine the Gibbs free energy (if it's negative) the process is feasible and it's only afterwards that the kinetic is studied. As for the adsorption many models gover the kinetic.
