What is the practical reference system in Einstein general relativity?

Dear Sirs,

The metric defined in general relativity theory needs a coordinate system for the metric measurement. How is it practically achieved?

The space-time is curved. But relatively to what (straight line?) it is curved? What is straight line then? A light raw? I would be grateful to your comment
