-FPGAs are not a microcontrollers (Arduino and Raspberry too).-

FPGA is preferred when you need signal processing, parallel processing or custom design of digital circuits. There are some A/D D/A (8, 12, 16 bit res) boards that you can connect FPGA boards.

I prefer PIC series for small and cheap designs. For example last time I used a 16f628 to count the fringes in an interference pattern. It has no ADC but its comparator was enough.

I prefer Arduino if I don't want to spend so much time. Code examples and libraries for Arduino is abundant. I guess max ADC res is 12 bits for Arduino.

Professionals tend to use ARM based MCUs like STM32. I also saw they use msp430 MCUs. Speed and low energy consumption must be the reason.

You question is answered in brief by Mr. Kaymazlar. I wish t elaborate it a little more with some other context.

First of all choosing a microcontroller depends on a few aspects. They are:

• Application Type
• Application Response
• Application Field
• Cost

Depending on these attributes we usually try to find the best fit. Sometimes it may be a simple PIC and sometimes it may be STM32 with Nucleo framework. Sometimes for keen precision we may prefer to use FPGA system(Not Microcontroller).

the Microchip website offers a parametric search over all 8 and 32 bit PIC and former Atmel microcontrollers.

In common cases, an AVR microcontroller will do. The SAM series provides 32 bit ARM processors, relatively large memory, and rich periphery. For example, in a comfortable user interface (no touch screen, lacking tactile feedback, but real hardware knobs (driving optical encoders) and real hardware buttons) I use four ATmega328P in Arduino Nanos to collect the user input (36 signals) and to control the LEDs (12 signals), and a SAMC21 (on an evaluation board by Microchip) as central processor because it provides 6 identical serial ports, configurable as SPI, I2C, or UART. So in a star configuration, the SAMC21 communicates with the ATmega328Ps, controls two LCDs and a MAX3421 evaluation board, used as USB host.

The software for these microcontrollers can be developed using the IDE AVR Studio which seems to me quite convenient (it's a matter of personal preferences, of course).

The 8 bit members of the PIC family provide hardware features surprising for this class, like assignment of peripheral digital I/Os to arbitrary pins, several DMA channels, and configurable logic cells (as in CPLDs) which can be connected to the peripheral units. Unfortunately, sometimes one detects silicon errors not even listed in the relative long error documents.

If program size and performance aren't issues of high priority, the basic Microchip IDE will do. However, one or two years ago, Microchip has invented the first assembler which secretly replaces instructions (MOVFF by MOVFFL); so, before starting any serious assembler programming, one has to write its own assembler.

TI offers a broad spectrum of microcontrollers. Again, the software support is a matter of taste. It took me two days to write my own header file declaring the registers of a microcontroller because the file provided by TI would have forced me to use names too long for my laziness, like This-is-the-house-that-Jack-has-built. :-)
