The pick in the state diagram Ni-Cu has nothing to do with the evaporation. These are the phase transitions in the solid state.

As Vadim answer you, the phase diagrams do not consider the evaporation rates of the corresponding metals, because they were built at atmospheric pressure.

There is an evaporation rate of the metals given by the pressure vapor of the metal at the considered temperature T (K). Then, at the pressure of 10-6 torr you should estimate what is the reasonable evaporation rate for your application, and then establish the maximum temperature you can reach.

All these parameters are given in the books of Vacuum Technology like the old one of Dushman and Lafferty, from Wiley (1962). The data are usually given for pure metals (Cu and Ni), but as Cu and Ni exhibit a fully solution phase diagram , you could extrapolate the mean value taking into account the percentage of each metal (in a first approximation).

As mentioned previously, phase diagrams are for solid-liquid transitions at atmospheric pressure, they're not relevant for your problem.
