Does anybody use a particular process when selecting which peer-reviewed journals to submit to? Is it guesswork based on similar research? I'd love to know if anyone has a good method to determine which journal(s) are the most suitable.

Some people use particular search engines or websites that work that out for you. I find it is more helpful to think about the journals that I read myself and I know will be suited to my specific field(s) because they are read by people I know personally or are in a similar area of research. I find it also helps because it may improve my reputation in that field and it will be seen by people that I might collaborate with in the future.
Some of the best way to determine and submit your paper to the most suitable journal are as follows;
1. Read the aims and scope of the journal
2. Read or download Guide for Authors.
3. Check if the journal is invitation-only as some journals will only accept articles after inviting the author.
4. If you need to publish open access know that most journals have open access options explained on the journal homepage.
5. Check the journal performance for the review and publication timelines.
5. Submit your paper to only one journal at the time.

When you do a good literature survey regarding your study area, you invariably come across very valuable and useful conference papers and journal articles where your research area articles are published. This is a good indication to find out suitable journals for your work also to be published. Good literature survey helps you to find good journals and conferences too.
