I want to extract and quantify EPS (Exopolysaccharide) from bacteria (originated from plants).

I precipitated EPS using 3 volumes of cold absolute EtOH from cell supernatant. Then I washed precipitates twice with cold absolute EtOH.

Then I tried two ways as follows:

1) Dissolve EPS in distilled water directly after washing

2) Dry EPS then dissolve it in distilled water

However, these precipitates were not dissolved completely in both ways thus I cannot measure the exact amounts of EPS. (I can see some floating particles)

There is any proper way for dissolving EPS in distilled water?
