I want also to know why we need high temperature for cell digestion.

I know the role of conc. HNO3 which act as very strong oxidizing agent that form nitrate salt of metal that are highly soluble and make the metal available in the solution before measurement.

may be the high temperature used to evaporate the excess of HNO3 as NO2 gas, i do not know.
