Continuous variables such as elevation, precipitation, temperature, etc. are normally summarized based on zonal statistics such as mean, median standard deviation for the spatial analysis. Then what would be the best method of summarize in the case of categorical data, for example land cover in this case?. Looking forward for you valuable suggestions.

One could evaluate the area occupied by each land cover category and use that summary to characterize your results.
If you are working on Land cover, you can look into the extensive work by Kevin McGarigal on Landcover metrics... There are summarised statistics like CA (Class Area) -which is the sum of areas of all urban patches etc...

However, the metrics are numerous and mostly tilt towards urban landscapes. This implies you'll have to dedicate some time to digest the contents of the book.
