I hoping to answer the research question: "Does age, sex, BMI, and physical activity moderate the relationship between a self-reported and and a performance-based mobility measure?"
What are the possible statistical analyses that can be conducted to explore these moderating factors?

1. The performance-based and self-reported mobility measures are both continuous and normally distributed.
Moderated regression analysis (regression with interaction/product terms) and/or path analysis with interaction/product terms could potentially be used. See

I reccomend you a moderation analysis with spss macro PROCESS (Hayes). You can download for free and is very easy and friendly interface to use. https://www.processmacro.org/index.html
It install in your spss a dialog window in analysis-regression- process
