Simply because Mie theory is a complete and exact solution to Maxwell's equations for the interaction of light with matter. It has stood the test of time. The theory cannot be improved (for irregular material the T-Matrix and DDE approaches are still based on Mie) and approximations simply cannot cover all aspects of size, polarization, and optical contrast (relative refractive index). By the way, the intensity distribution should never, ever, be converted to number - small changes in intensity make huge changes in number for such an ill-posed deconvolution. Take a look at:

I think none of the theory is complete and exact, all these have problems and limitations. Short answer is; selection is normally made when computed results are close to experimental results.
