What is meant by the ratio of amide II to amide I in protein structure?

Hello everyone,

I'm planning to do FTIR to determine the secondary structure of oat proteins. I just want to know if there is a relationship between the ratio of amide II to amide I to the protein content of oat protein isolate or maybe if its linked to the nitrogen fertilizer input at seedling and growth stage.

Any insights regarding this will be very useful and thank you all in advance!
