What is a suitable temperature sensor need to be use in developing heating plate system for compression molding machine?

In mechanical system design,if you were to design and developing a heating panel system for compression molding machine,it is possible to use thermocouple as the sensor to detect the temperature and what type of thermocouple ?

Currently, I'm developing a heating panel system for compression molding machine.As I know, thermocouple is a sensor that can detect temperature.
