In WSN, the collection of N nodes have to observe and have a measure about a certain physical phenomenon. Please, anyone can provide a reference/paper that provides a statistical model that well fit the distribution of the data across the sensors? In particular, I am interested for a model where each sensor has to measure the energy of a signal emitted by a BS/antenna/signal source.

The distribution of data, in space and time, is according to the process model, in general distributed parameter systems, for example heat distribution in space. The sensors from the network must be placed according to the space distribution of the signals from the monitorized process.
in wsn,if you need to analyse the signal power at each BS you need to implement a timely scan procedure or an algorithm that scans each BS every second or at specific intervals of time for particular WSN structures.
There is a standard called sensor web enablement (SWE) from Open Geospatial consortium (OGC). You can take a look.

It will not give you any statistical model to fit the data. However it will give you how to semantically and syntactically model the data. It may or may not help your problem.
I think that it is better not to make any assumptiom about the distribution of observations. Try, if possible, to show a general result.
