What Is a converting factor Nitrogen into protein ? If answer is 6.25 how it is correct?

In general fish is considered to be rich in proteins and contains 16 per cent of proteins. As protein is calculated from the amount of nitrogen, factor used for multiplication which is derived from 100/16 equals to 6.25. It is true in case of proteins from few sources such as fish proteins.
