That person/editor is an expert on the subject and has multiple publications on it.
Your expertise are relevant to the subject
Also, in the invitation letter, is there a reference to the work based on which the editor is inviting you to contribute. This is a good indication that the editor read your work and the book project is a legit one.
As mentioned before, the guest editor real defines the technical quality of the book publication. I personally have a positive overall experience with Intechopen (co-authored a book chapter back in 2012). The fact that it is open access gives you good visibility. On the other hand, Intechopen doesn't have the prestige of other publishing houses like Elsevier.
