I am trying to get agar get to be less pasty and crumbly upon chewing, I wanted to try glycerol but could only get hold of Polyglycerol esters of fatty acids (E 475) quickly so am trying that for now but it isn't helping with pastiness in high concentration agar gels > 6% w/w. Does anyone know how much glycerol is in this or have any ideas about how to decrease pastiness in agar gels?
