what are the possible ways to make Horizontal and Vertical polarizations of light using various optical components???

If I am doing one scattering experiment with light ...what are the different possible techniques to make Horizontal and Vertical polarizations of 

1. Incident light ( before scattering)

2. Reflected (or scattered) light  (After scattering)

and How we can distinguish it??? Or How we can confirm ( or test ) the polarization of the light for both the cases??

I should mention one more thing ...I am doing scattering experiment on some crystals with specific shape and orientations... and I want to understand the polarization conditions with respect to the crystalline axis....
