I am working on a test rig, the test includes measurement of some parameters : pressure, temperature and water flow rate. For monitoring the variation of temperature, I was wondering what type of thermocouple that I could use, in other words, what are the test conditions that need to be specified to choose the suitable thermocouple, is it temperature range or the rate of temperature change or other factors?

Type K thermocouple is Chromel, Nickel Chromium and Alumel, Nickel aluminum
joined at one end has a temperature range of -200 deg C to 1200 deg C, while Type T is copper and constantan crimped at one end and has a temperature range of -200 to 350 deg C.Type K thermocouple is used in furnaces with magnetic materials processed while type T thermocouples are used in atmospheres with inert pressures.
Type K vs T (vs B,R,S,N etc) are different thermocouple wire compositions designed for different temperature ranges. Type K (chromel-alumel) is probably the most common. Each type has it's own calibration curve (millivolts vs temperature) and almost all thermocouple readers are selectable for which type you use. A great resource for thermocouples is Omega Engineering. They have off-the-shelf TCs for an incredible diversity of applications.
