The approach recommended by Ingmar is very appropriate. You can also use interpretive thematic analysis. That is, the inductive construction of themes and categories.

Briefly, you would do the following:

1) Transcribe the interviews

2) Analyze the text guiding by your research objective and identifies all the phrases relating to reasons for "not using latrines"

3) Group the reasons into groups by similarities (categories)

4) At a deeper level, you can generate qualitative themes.

Try to have this analysis done by two researchers independently and then come together to compare results.

Have you already begun your interviews and with how many key informants? If so are you using a coding system of your own devising, noting thematic elements in the margins (open-coding) or possibly using the OCM subject-indexing system? Whichever way, themes should start emerging from your transcription and notes. Then determining which themes are most relevant to your research question, which are surprising, those with little impact, all go into your analytical process.

That said, I'm with Ingmar, Charmaz's grounded theory will help.

I personally find Grounded Theory to be a rather complicated and abstract approach for looking at practical and applied questions such as you are analyzing. As an alternative, I would recommend Braun & Clarke (2006) on Thematic Analysis. This article has received over 30,000 citations, so it is a well-recognized analytic technique.
