When it comes to Pentecostalism in Central America, University of California Press has a series called The Anthropology of Christianity with a number of contributions that might interest you. Kevin Lewis O'Neill has two interesting books: Secure the Soul: Christian Piety and Gang Prevention in Guatemala and City of God: Christian Citizenship in Postwar Guatemala. There is also David Smilde's Reason to Believe: Cultural Agency in Latin America Evangelism.

One perspective in non-foundationalism, which rejects having to choose between a foundationalist and post-foundationalist hermeneutic. 

The others are the research methods based on participatory research and appreciative enquiry.

Perhaps you could consider the liberation theology of Freire, where the 'pedagogy of the oppressed' applies to empowerment and therefore to an intersection of the local sociological concerns and the phenomenology of Pentecostalism. See Cheryl Bridges Johns' work in this area, for example.

Have you seen Calvin Smith's Pentecostal Power: Expressions, Faith and Impact of Latin American Pentecostalism, published by Brill (2011)? For a general overview of sociological studies of religion, I have found Roberts and Yamane's Religion in Sociological Perspective (2012) to be helpful. 

for a cynical but field-clearing study of religion see Preuss, Samuel. (1987). Explaining Religion: Criticism and Theory from Bodin to Freud. Yale University Press.

Materials on Pentecostalism in the USA and the rest of the world can be found in the Pew Forum on Religion & Public Life. A title at hand is "Spirit & Power: A 10 - Country Survey of Pentecostals". 

Several good suggestions already given, but be sure to think about this from the perspective of material culture. There's been too much done on the "theologies" of these movements (theologies don't really move people), when in fact they are rapidly growing because of the material dimensions: the impact of music, emotion, affect in general, appeal to the senses, use of images and objects, etc. 

Have really digested the works of Gustavo Guitterrez?

I think that opinion on what sociological perspectives are 'current' in the study of religion at any one time, will differ; therefore, perhaps it's better to ask yourself---from what sociological perspective do YOU want to study religion (pentocostalism)?

Functionalism?

Conflict?

Marxism?

Interactionism?

Postmodernism?

Weberian?

Etc.?
