I would first like to determine in what ways you wish to apply the cognitive sciences - at a systems view such as drawing upon the structure of memory and other processes to inform or improve industrial processes, or at a human view such as better understanding/managing the human elements of the industrial system. (Or both.)

If the former I would, in addition to looking at specifically applicable modeling literature, also look into the realm of bio-inspired or evolution-inspired engineering. If the latter, I would look more into literature in the industrial psychology and behavioral neuroscience fields.
