EU legislation on the killing of animals aims to minimise the pain and suffering of animals through the use of properly approved stunning methods, based on scientific knowledge and practical experience. It applies for farmed animals.
In 2009 the Union adopted a new regulation on the protection of animals at the time of killing - Council Regulation (EC) N° 1099/2009 - which replaced the previous EU legislation on the issue. It started to apply on 1 January 2013.
Mainly, the advantage is for the animal as this is unconscious when the throat and carotids are cut and while they are losing the blood. For this to be true, the technique must be applied correctly (very well trained, appropriate equipment, correct handling) and followed immediately by the exsanguination (~30sec). This is for the welfare of the animal in the last minutes of life. Meat quality will benefit as the animal will be adequately restraint and could be handled properly. If not done correctly there will be no difference to the animal (and meat quality) who will be alive while all this process occurs. The issue arises worldwide when the standard for any type of killing is not followed accordingly, you could find multiple horrific videos from certified and non-certified abattoirs that simply mistreat animals. Raising an ethical question about our obligations towards them as consumers. In Latin America, in theory, many countries seem to follow strict rules but on the ground, few abattoirs will follow them (some countries might be good at this). On the side of biosecurity, it is certain that certify abattoirs will follow the rules but it does not mean that all animals are properly stunned or properly handle for kosher or halal killing, or for non-religious slaughter. Even further, religious slaughter may not happen at certified abattoirs at all due to lack of clear regulations on those type of killings. This may increase the waste of animals that were not properly killed due to the lack of equipment. There are numerous papers on the benefits for a humane killing of production animals. Even Dr Temple Grandin says that Kosher could be humane if done properly, however, she calls for the use of CCTV cameras and strict auditing to improve the method and to make sure that animals do not suffer. Last year a certified kosher abattoir was filmed mistreating really badly animals. I have attached some links.

When performed correctly, causes an animal to lose consciousness, so the animal can’t feel pain. The law states that, with few exemptions, all animals must be stunned before ‘sticking’ is carried out.
The slaughter technique depends on the culture and religion of the consumer, and for this reason, there is no unique method for all markets but the method of slaughter depend on the speiality of the market, but all methods must reduce the pain and suffering of animals during the killing process and give good results for the meat quality for specific market.
The best is halal method of slaughtering without stunning of the animal. Because it causes gushing out of blood from the slaughtered animal. Because, the heart of the animal will beat slowly upto few minutes post slaughter.
Stunning is preferred by some people with the perception in their mind that it causes less pain. But again I would say halal method without stunning & it is painless as well.
As our colleagues reffered, its not only depends to our religious, but also depends to animal welfare, for exaple in Iran, we have Helal system for our animal and also to respect to animal welfare before sloughter we we use weak flow of electericity for stunning animals, i beleive that this one has teo advantage, the first one for workers, because in poultry industry the poultries
I think these methods of stunning not suitable for animal welfare and product quality because these methods not allow to all blood flow from the animal's body.
As per your question about the advantage of stunning for animals before slaughter, it was first thought that stunning will reduce pain at the moment of slaughter. But this proved untrue by some researchers who stated that once the a perfect throat cut is performed the pain will take only few seconds and all blood will oose out which render carcass healthy.
