I am not sure it is wise to classify a society as illiterate. Their technology may be behind our times and their understanding of modern technologies therefore slower but if you closely assess their traditional systems and practices you will find very advanced scientific background to them. Therefore, to incorporate agricultural ideas (assuming you mean 'modern ideas') you have to adapt those ideas to what the society already practices. For example, any 'illiterate' society will understand that water is lost from a soil surface faster during the day than during the night, it is thus not a very long stretch of mind to advice of late evening and/or early morning irrigation in such a society.

We used something methods related to "collages" and "rich-pictures". In simple terms, use paper and scissors and magazines for people to collect pictures that express their ideas and stick them on a big paper. Let them then tell the story that goes with it. In general any method that involved other means than words (clay also works very well; as do other types of drawings) will work, either them telling you, or you telling them.

The most important to keep in mind is that you should be able to use the exact same methods to tell them something as what you expect back from them.

As a sidenote, I agree with the previous comment: make sure that you have them express their ideas, and do not force your ideas onto them. This will certainly not work..

You are looking to work with oral preference learners. Ghanese culture has a rich oral tradition. You can use stories and proverbs to help in the training. Develop the material so that it can be shared orally through stories, with repetition of content, and using folklore. Your learners gain most of their information and solutions for problems through communicating with friends and neighbors orally, so design your material to be shared in this way.
