Typically graphene oxide and reduced graphene oxide can be called derivatives of graphite. Similarly, what do graphite and carbon black fall under? I do understand graphite is a layered structure while carbon black is in its sub-micron range spherical particles. Is there any specific category where both can be classified under?

Diamond, graphite, carbyne are allotropic forms of carbon. Soot and carbon black, activated carbons ... belong to mixed (transitional) forms of carbon.

Most importantly is to remember that the term Carbon only refers to an element. Now to describe a carbon material, the term Carbon is used as a qualifier. The carbon materials that have sp2 atomic structure, are essentially graphitic in nature. And those with sp3 atomic structure are commonly called by their allotropic form, such as Diamond, lonsdaleite, etc.
Therefore, we can comfortably say that Carbon black and graphite are all carbon based materials.
Carbon is a versatile material. Both in terms of allotropes and in terms of aggregation forms. Please consult an old, but still very useful book:

Dear Rajalakshmi Rajendran this is clearly an important technical question. The key to understanding this issue is the question whether we have pure carbon of impure carbon containing organic components. As already mentioned by Yuri Mirgorod and Niharika Pandey we talk about allotropes of carbon when the material consists only of carbon atoms. These include the classical allotropes diamond and graphite but also fullerenes, carbon nanotubes and graphene etc. For a good overview about this please have a look at the very instructive Wikipedia entry on "Allotropes of carbon" (https://en.wikipedia.org/wiki/Allotropes_of_carbon). Carbon black does not belong to the carbon allotrope family because it contains organic components and can be seen as an impure carbon material.
Materials such as graphene oxide could be called derivatives of graphene as they contain oxygen-containing functional groups such as OH and –COOH.
