Nothing will occur with the chemical composition of the CDM media, it is mandatory to be sterilized by autoclaving before being used for cutivation of fungi. Sucrose will not be affected by temperature and pressure, it is possible to be converted to glucose and fructose only by enzymatic hydrolysis.

Sucrose decomposed at 186 degree Celsius, it does not melt but when it reaches decomposition temperature, sucrose decomposes into fructose and glucose. In the autoclave, water is present therefore during the heating process a reaction known as sucrose inversion in presence of water vapor will occur and the sucrose will breakdown into its components, one molecule of glucose and one molecule of fructose.

Mr. Tarafdar, as far as I know melting sucrose at 186 deg.C goes to a fluid product named caramel but at higher temp. decomposition breaks down the sucrose molecule directly to carbon dioxide and water or to carbon and water. Inversion of sucrose is an enzymatic reaction, in presence of water and invertase enzyme but not at high temperatures. According to the question, autoclaving at 121 deg. C will not make any changes in sucrose structure. You have maybe some references to support your answer. Regards.
