I know sealants exist for small vacuum leaks.
But in my case i have a surface in my UHV (1.10Exp-6mbar) system that outgasses quiet a lot.
The surface is bout 100 square cm
Is there a product available than i can spray on there to reduce this outgassing ?

There are leaks and there is outgassing, your question sounds like a mix of both.
If you have a surface which is outgassing and you need this type of surface, you can't do anything because that would mean you no longer have that kind of surface.
If you have leaks, using a sealant is the last resort, fixing the leak by replacing the viton or copper ring or also rewelding should always be preferred options. On the vacuum level which you described simple 2-component glue can act as a sealant, but again, consider this a last resort only.
I'm sorry if i was not clear, i was talking about outgassing.
I have an epoxy material inside a vacuum chamber and i would like to know if i can coat it to reduce outgasssing.

Please let us know: what is the purpose of your setup? Please describe.
Exactly, what is the purpose of the material? If there's no reason why it should be exposed to the chamber, why is it there in the first place?
In principle you can evaporate a low-adsorbing metal like gold on it, but essentially the outgassing will go slowly via some sort of channel like the "virtual leaking" from unvented screws.
