You should work with the official projections for India. Not because they are official, but because of information exchange issues. It is easier when everybody in the country uses the same. That being said I understand there is a move from the old Everest ellipsoid + polyconic projection towards WGS84 - UTM. If you are working on a large scale project, then I would use the UTM and the corresponding zone for your area. A problem could raise of your research area covers more than two UTM-zones. Depending on how much does your research area "protrudes" into the other zone, you can forget about it and live with the error. By the way UTM has sort of become a Standard through out the world now for large scale mapping. If you are working on an extended reality small scale maps, then you may have to choose another projection type. I would choose one with the least area distorsion for such a case.
