I recommend the book of Jackson, A user’s guide to principal components, published by John Wiley & Sons Inc, 1991. Contains a lot of practical examples with data sets that you can calculate through. The chemometrics literature also contains a lot of published papers that focus on principal component analysis.
There are many books and huge number of articles on PCA. A very good book with solid mathematical background needed in understanding PCA, as well as many application problems is Applied Multivariate Statistical Analysis authored by Richard A. JOHNSON and Dean W. WICHERN, published by Prentice Hall in 2007
