For assessing the impact of COVID-19, data gathering should be done from different age groups and different geographical areas across the world. Results of this dataset should be assessed between different periods of the pandemic (Like within 3 months, within 6months or within a whole year) and that would provide a better perception of how people respond to such a risk to their health, revealing social implication such as health attitude, their behaviour and conduct. After getting these responses, evidence-based guidance can be provided for policy makers.

That would depend on your research question or hypothesis. As the pandemic is global, you might want you look at WHO datasets, if you looking for specific medical information, you might use the American CDC research outputs.

The method will depend upon your research hypothesis and/or research questions. Qualitative methods are good for general experiences - like what is it like to be ill from COVID-19? Quantitative methods are best for specific outcomes - fatigue, respiratory distress on the patient level. Or impact on the economics of a city or country. I'm thinking this is a master's thesis. Look at what access to data you have. One of the as yet under-reported stats are the death rates from COVID in different parts of a country, or in the US, a state. There are number of variables that affect death rates including quality of hospital care besides where people work, general access to care. Good luck!
