May I ask the reason for N2 drying?

As I know in SPE biosensor, like glucose sensor, usually use oven(in air) to dry.

In the processing, the control of humidity of storage is important unless you need to use it immediately.

I agree with Li-Fan, drying the antibodies is likely to compromise their integrity, whatever the method you choose. That said, my past supervisor once suggested freeze-drying to preserve an antibody layer on biosensors, so that might be a less destructive approach.

In any case, electrochemical measurement alone will not show whether the antibody has retained its function. You would need to characterize it through a antibody/antigen test or through labelled microscopy, and that is the trickier part.
