I would suggest several general publications on critical thinking and teaching:
1. Byram, M., 2008, From foreign language education to education for intercultural citizenship: Essays and reflections, Clevedon: Multilingual Matters.
2.May, S. & Sleeter, C.E., 2010, (a cura di), Critical multiculturalism: Theory and praxis, New York: Routledge.
3.Porto, M., 2014, Intercultural citizenship education in an EFL online project in Argentina, Language and Intercultural Communication, 14 (2), pp. 245-261.
You may want to take a look at my publications, an early one is attached but more recent ones are also attached with references available through a academic search.
Have a look at Diane Halpern's work. We purchased her book and workbook and found it very useful in guiding the creation of our critical thinking unit in our first year experience.
I use the asynchronous debate for developing students' critical thinking skills which I have found to be very effective. This conference paper link explains the process and results that I hope would be helpful for you:
