if the LAB incubated anaerobically , why do we use catalase to inhibit H2O2 ? hydrogen peroxide produced when the oxygen is available so why do we need to inhibit it in the absence of oxygen ?

You mean there is a sensor which can detect only 36-37 Deg. C. and neglect other ranges of temperatures.
