My research requires fabrication of steam distillation unit including distiller, condenser and separator. But, I could not find available paper that shows mechanical design step.
The Perry's Chemical Engineers' handbook introduces both the fundamental concepts and the design of the unit. You would probably find most of the information you need.

You need a distillation tower operated with steam distillation. Condenser coil and a phase separator (Florentine vessel). The distillation tower is made of 304 stainless steel and is built with perforated plates; but if the liquid has been filtered or centrifuged then you should use dishes with bubble caps, also constructed of 304 stainless steel mechanical design of up to 40 feet tall and 6 feet in diameter, material thickness is 1/8 inch. The tower should be operated at one atmosphere pressure.
Although food is not a binary mixture, it can be considered as well, and is called seudobinaria mixed so that the components to be separated is water and the oil. The latter is driven by the steam from the top of the tower.
Sending a file with a design model binary distillation tower to separate benzene toluene, but can be applied to oil separation (vapor) and water.
Attach also a manual with graphics and table data used in the design.
