I boiled the mature filed corn for 7-8 min in boiling water but it became harder and developed bitter like taste in spite of soft and sweetness. I need to develop sweet corn from the field varieties corn. How can I do it?
how you will convert a field corn to sweet corn, by just boiling?, by boiling its not possible to increase the sugar content and corn is very hard grain by just boiling 7-8 min it cannot be cooked easily as per my knowledge
You will not be able to take field corn seeds and turn them into sweet corn. Field corn is high in starch; alpha-amylase can be used to break down starch into smaller sugar molecules. Sweet corn contains one or more mutations so that the endosperm will accumulate more sugar than it normally would. According to Emmalea Ernest at the University of Delaware: "The genes that make sweet corn sweet are all recessive, which means that a kernel of sweet corn must have two copies of the gene (one from the mother plant and one from the pollen parent) in order for the sweetness trait to be expressed."
To turn field corn seeds into sweet corn, you will need a breeding program and access to the sweet corn genetics.

I agree with 2 previous answers, but may be you mean the full matured seeds of sweet corn varieties as field corn? But this way is also not very effective, because it is possible to store sweet corn by drying and next recovery by water, but sweet corn must to be harvested in stage of milk ripeness - not after fully ripeness.
In case you mean the field corn in stage of milk ripeness, the kernels are also not suitable to prepare, for example, conserves like sweet corn because the consistency of canned corn will not be the same. Peoples in our country usually use the cobs of field corn in stage of milk ripeness for boiling them and eating with salt. But it is not a way for sweet corn.
