It depends on the temperature range you are concerned with. Water is always a good material. It has large heat capacity and latent heat. You can freeze it with absorption refrigeration, and then store the "cold" rather than the "heat".

Or phase change materials, mostly paraffin. It is being utilized in building air conditioning.
