If you mean oil=saturated hydrocarbons, the answer is NO. They don't absorb UV.

To use a UV spectrometer the oil must absorb on this region of the spectra. If you have aromatic rings, in the oil the concentration can be measured. You can measure the absorbance at the initial concentration and then the final absorbance after the oil has been adsorbed on the adsorbing media. This can give you an idea of the quantity of oil adsorbed.
