If you are interested in methods to teach and learn languages (1st and 2nd) by using the perception of the learner, here are two methods which could interest you : the verbo tonal method by Petar Guberina (for the perception of sounds) and the Borel-Maisonny's method (for the perception of articulatory movements, but articles about it are only in French...). They have been used at first for people with communication disorders, but now also for non-athological people.
