it is depend on the soil properties, you can convert volume to weight after know the soil bulk density

I do not know which paper treated soil (clay) density = 0; the only guess is that the authors of that paper would have accounted for the effect of some upward pressure (in static analysis) or vertical acceleration (in dynamic analysis) in an indirect manner.

Density of any material cannot be equal to zero. However, while modeling, this value might have been intentionally set to zero to nullify the effect of surcharge in the calculation.
